I'm experimenting with baking "skinny" snickerdoodle cookies. I love cinnamon, and it's autumn, so those cookies are a good fit.
I've come to the conclusion that I can make them... but they're not great in taste. I started with white wheat flour from Trader Joe's that a friend gave me (she was moving and did not want to pack an open bag). Next I used Truvia for baking: 75% of the sugar is replaced with the artificial sweetener. I figured it would be okay because I'm rolling the cookies in cinnamon and real sugar, so the taste wouldn't be as pronounced.
The recipe called for a quarter of the butter of a regular recipe. I'll add here that the original Snickerdoodle recipe I have is 182 calories per cookie. The "skinny" recipe is 54 calories per cookie. The cookies are a little smaller in the second recipe as well.
The first batch was terrible. Cakey cookies with little moisture/fat. You could really get a chemical aftertaste, too. Blech. My son and his girlfriend each took a bite, and that was it, so that was a big bummer.
The next batch is in process. I doubled the butter (still half of the original recipe), but they're still cakey and that chemical taste is coming through. A friend of mine suggested Swerve instead of Truvia, but she told me too late to solve the problem with this bake.
I like snickerdoodles to be on the thin side with a crisp crust and a soft middle. These cookies that I'm making are visually appealing but just don't have the "oomph" and deliciousness of regular cookies.
My conclusion is that if I'm going to eat a cookie, it's going to be a GOOD cookie. Trying to make it less caloric so I can feel more virtuous isn't working for me. I believe in real ingredients full of flavor combined with portion control.
