I'm mystified as to how one eats 3 servings of whole grains AND keeps carbs down AND controls calories. As far as I can tell, it's not possible to do more than 2 servings per day unless I cut out a serving of animal protein -- and maybe that's what I have to do. It also seems like my fat calories are higher than they should be, even though I'm eating only lean sources of animal protein. This is a very delicate balancing act, and I guess the proof will be in whether my blood sugar and cholesterol come down and I lose weight.
