As interesting as yesterday's weigh-in was, this morning was a surprise. I am 2 lbs down. I didn't see that coming! So looking back to yesterday, my RDI was under 1500 calories overall with a significant percentage coming from delicious FAT. I maintained my carbs between 20 - 25. This of course is my plan. I was actively out and about visiting my mom, daughter's piano lessons, etc. Yesterday I also did some large scale cooking (this is a rare occurence for me!). I am slowly converting my family to LC but they don't even know it because it tastes so good - no complaints.

I made a huge pot of cream of cauliflower soup, about 4 servings of corn beef hash and 5 servings of cabbage steamed with butter. I had some of the corn beef with the cabbage and it was quite good. My daughter also had that for dinner. One daughter tasted the soup and pronounced it "yummy" - hehehehe ... must be all that cream!

Seriously though, it's quite a discovery to recognize the difference from one day to the other on the scale and with my feelings of well-being. You can definitely track the reaction of your body and mental state to everything - fat intake, lack of sleep, monthly hormonal changes, increased carbs, stress, exercise, water intake, etc. If I continue to pay close attention, I will truly become an expert on my body - as it should be.

It is astounding to me that not so long ago, I lived in a sugar induced fog - I could feel the toxicity building up in me (mentally and physcially). I am so grateful for the wake-up call! My optimism is returning and my body is transforming. ROAR!!!
