Had a great time in the woods at my Mom's house. There is no cell phone service there so its a different way to spend your day. We swam in the pool, fed animals and played board games. We had fish and shrimp the first night there, fried, sauteed, and baked.

I made homemade steamed pork dumplings with my sister. She did the dough and rolled it out and I put the filling in and closed them up. They were pretty good. We also had some Italian beef sandwiches and cheesecake from Chicago a friend of ours had sent my sister for her birthday.

And we finished the long weekend off with fried pork chops, rice, gravy, cream corn, field peas, biscuits and fresh tomatoes and cucumbers. Fun fact, they got the tomatoes from an older lady who lived in their very very small town. They traded 3 chickens for about 2-3 gallons of tomatoes. They were really good.

Besides all that, it was mostly fruit and protien chips that I had brought with me. Mom also had some fantastic Georgia peaches too. Breakfast most mornings was breakfast crackers, coffee and a protein shake. There was one morning where we had brunch of bacon, eggs, grits, toast, fresh tomato and orange juice.

Even with all the good food and giving myself the time off to appreciate my mom's food, I had no 2nds, and had smaller servings of everything. My stomach just couldn't handle more. I'm use to smaller portions now and just kept getting full.

Extra highlights of the weekend was going out to my Dad's old place, and looking at getting a cedar counter top from the house, but we will need to go back with more tools. The power is off out there and the bar top is really solidly built. So plans are to go back out in October when we go back down to see family, with some extra battery powered tools. We had lunch with my baby brother in town as well at a great bbq place, I had brisket and half a potato while watching the bay.

Then yesterday morning I was up before mom and feeding my youngest. She didn't like her cereal that morning, so we went to give it to the mini-pig on the porch and there was Buck, one of their horses, out and walking to the house for a visit. So I had to wake mom up and we had to walk him back down to the horse pen.

I'm tired, and I'm sure my weight is up from the sodium over the weekend. Have I mentioned my mom puts extra salt in everything? She doesn't absorb salt normally, so she has to take a salt supplement everyday. In addition to that she adds lots of salt to everything. And salt and my body doesn't get along.

So goals this week is shed water weight, go light on the salt, and keep exercise up. In addition to that, haircuts for the kids and I, and school prep for my soon to be kindergartener.
