Two whole zucchini sliced thin1/8th thick. Lightly blanch them in salted boiling water, just till the outside skin turns bright green. don't let it get mushy. 1 lb of very lean ground meat. One bag of spinach. I mix my meat with half the bag of spinach. Add basil. And then the light ricotta I add the other half of the bag of spinach. Make your layers ,only the top gets the low fat skim mozzarella. I do not add eggs to the ricotta.
