Recipe is super easy. 2 slices of Seedtastic toasted bread 80 calories each (ALDIs) 1 TBSP wholly quacamole, handful spinach. 1 egg beaten until fluffy then I add 50-55g of 1-2-% cottage cheese(fold in) cook on low/med heat a bit longer than a normal scramble. I like when the cottage cheese lets go of some of the water and gets a cheesier consistency.

Oh, that one I topped with Aleppo pepper flakes. They are milder than red pepper.

Mello B— consider buying extra firm tofu and crumbling it into the eggs as you are scrambling. Lots of nutritional benefit
