Hey community, hope your day was a good one! Mine was a day of experimentation. I'm sure I tried the Atkins diet somewhere along the line...probably have some books too. But I don't recall trying to maintain %'s of fat, protein, carbs. I didn't do bad for a first day try.

I thoroughly enjoyed my meals today. It was a bit of effort to do some cooking...but easy cooking. Threw a frozen chicken breast in some seasoned water and fried up some bacon.

I'm actually full and do not feel hungry at all. But I got into the habit of eating a Power Crunch protein bar every night, as I told myself I needed the 'chocolate fix'. So I'm sitting here fighting the urge go get that fix. It's amazing how we can form ridiculous habits. Oh, yes, and the nightly cherry eating contest with dh!! Passed on that one....and $6 a pound, probably a good idea!

Ah-ha.....will I have the 'power' over the Power Crunch bar! Stay tuned!!!!

I pretty much haven't cooked anything but microwave stuff since my son grew up but I've been working on it over the past few weeks. I am now in possession of a mandolin. a spiralizer a blender and two keto cookbooks so we'll see. I just wish that more recipes were written for one or two. There's no way I'm making servings for 4 or six so I'll have to try to adapt the directions. I used to eat avocado's when I was growing up because my mom used them in salads but like you I'm only just starting to eat them again. I forgot how much I liked them. Good luck, this could be fun.

Sue, I recently bought a spiralizer and so far one cookbook. Used the spiralizer once or twice. :) First day I had a hard time reaching my macros... I'm hoping, it will fall into place. My mindset has been so totally opposite of what I'm trying to do.... Now get in the kitchen and start spiralizing... lol

I think I'm gong to try zucchini, heavy cream, ricotta and cheddar cheese--mac and cheese without the flour. I never thought I'd be cooking again much less trying to get creative.

I love my spiralizer! It makes the nicest angel hair cabbage for coleslaw! I came up with a LC version of KFC coleslaw dressing, and I have to say, it's even better than the original. The recipe's in my cookbook on my profile. ;)
