Well the pumpkin 'custard' I made last night was OK-the other one I can't find the recipe for is better, but I still liked this one. I did not get to have the pumpkin pancakes this morning because DH made me an omelete and bacon :)
Hoping to see some sort of loss this week since I have up'd my veggies. TOM just left so maybe I'll see something by Friday.

Couple Pumpkin Recipes :) Sorry if these look al screwed up-I know FS doesn't tend to keep the formatting!

I was looking for a pumpkin custard recipe I had yesterday-didn't find it but found this one:
1/4C canned pumpkin
1.5 oz cream cheese
1/8tsp cinnamon
1 packet stevia (or splenda)
Mix all well and microwave for 40 seconds. Top with whipped cream if desired. This recipe has 7.31 carbs (5.41 net). Serves one.
Low carb Pumpkin Pancakes
1 egg
1/2C pumpkin
1/3C flaxmeal
1TBS butter, softened
1/2tsp vanilla
1TBS sour cream
1 packet stevia (or splenda)
1/2tsp cinnamon
1/4tsp baking powder
1/4tsp baking soda
In a bowl, beat egg then add pumpkin, butter, vanilla and sour cream. In a separate bowl, mix dry ingredients. Blend all together. Cook on lightly greased skilled-use about 1/3C for each pancake-Serves two (2 pancakes each). Per serving-11.48 carbs (9.06 net)

if anyone sees this-I am looking for a pumpkin custard recipe-apparently it is one of my favorites, yet I can't seem to find it in my cook book :)

Was incapacitated by a TOM migraine all weekend. Probably didn't eat enough. Did drink a lot of water-weight is still up. Adjusted menu to add more veggies.
